Also, I bought the veggies myself today from two sabjiwalas, and felt so good, even though the bastards much have cheated me. But there is something so special about buying the vegetables, makes you one with the process. 🙂
Anyway, here goes..
RAVENOUS RED PEPPER SOUP
What you need:
Four peppers, yellow and red(dont use green you boring, miserly choon), deseeded
Garlic to taste
A knob of ginger, finely chopped
Three onions, quartered
One veg stock cube/one glass or more of homemade stock
Salt to taste
A teaspoon of crushed peppercorn
What to do:
1. After you have deseeded the peppers, put them on a baking tray, along with the whole garlic and onion, and put them in the oven, till you can see them well done and mushy under the skin. Alternatively, roast each one on the gas till the same thing happens, no clue how you will do that with the onions, maybe put them in a pan or something.
2. Once youre done, remove the skin of the peppers, (as much as you can), and put everything from the tray in the mixie. This is what it looks like when its done.
3. Put the pureed stuff, the stock cube, salt, pepper and two glasses of water into a pan, and let the contents boil, boil, and boil. Notice the scrumptious tikkis happening on the next stove. Ha!
4. Add to cups and serve. The smaller the cup, the more people you can serve. Plus a small cup of soup is enough with a big dinner.
