LAH DI DAH SALAD WITH MUSHROOM AND SPINACH
What you need:
250 grams of spinach
A packet of mushrooms, approx 400 grams
Oil, enough to deep fry
A smattering of sesame seeds
Two tablespoons of vinegar
One tablespoon of sugar
What to do:
1. Boil and slice the mushrooms thinly, and keep aside.
2. Prepare the marinade by mixing the vinegar and sugar together, and add it over the mushrooms.
3. Chop up the spinach and fry it, its better to roughly chop it and take out the stems, but if
youre lazy like me, put all in. Once its done, take out the extra oil with newspaper.
4. Assemble the salad by keeping the mushrooms on the bottom of the plate, and adding the fried spinach on top. Lastly, add some sesame seeds on top.
Ok, I know and can feel that this doesnt look really good, but sincerely speaking, it tastes great! It is a great way to use up some leftover spinach, and is also a great reason to purchase spinach in the first place. Anyway, after these wretched winters, we wont be seeing these green beauties, so its good to make use of them while we can. I feel. 🙂
