Day 74/90

So today one of my forever favourite people was over for dinner, and we decided to pamper through food. We made not one but three dishes plus a soup and some salad, and I am kind enough to give all out today for free. So here goes..


A VERY DELICIOUS VEGETARIAN INDIAN MEAL FOR FOUR 


Cauliflower soup 


What you need: 


One cauliflower, stems removed, cut into florets and washed 
A teaspoon of chopped ginger 
A splash of milk 
Salt and pepper to taste
One onion, chopped in rounds  
Vegetable oil for cooking


What to do: 


1. Add some oil into a pressure cooker, and once its hot, add the chopped ginger and onions. Once they are beginning to brown, add the cauliflower, and a little bit of water, keep on the gas till the hissing sound happens. 





































2. Take them off the gas, and take out the cauliflower and let it cool. 


3. Once its cooled, add it to a blender. 







































4. Once that happens, take it out and add it to a saucepan, with some milk, salt and pepper. Boil it. 



































5. Now its ready, you can serve it as and when you want. 


For some extra taste, add some butter on top. 🙂 


A very mixed dhal 


What you need: 


One onion, finely chopped 
One and a half tomatoes, finely chopped 
Four garlic cloves, chopped 
One teaspoon of ginger, chopped 
Salt to taste 
One teaspoon turmeric/haldi powder 
Half teaspoon coriander/dhania powder 
Half teaspoon red chilli flakes powder/lal mirchi powder 
Half a cup of masoor(red lentils) dal
Half a cup of channa (bengal gram lentils) dal
Half a cup of urad(black gram lentils) dal 
A cup of water, or enough water to cover the dal comfortably  
A tablespoon of oil
Chopped coriander to garnish 


What to do: 


1. Soak the lentils in water for as long as three hours. If you cant do this, its really ok, but you should. 





































2. Heat up some oil in a pressure cooker, and once its hot, add the ginger, garlic and onions. Once that is brown, add the tomatoes and salt, and the turmeric and coriander powder, and the red chilli powder. Now add the lentils, and some water, and secure the lid of the cooker. Let it cook till one whistle on high flame, then lower the flame and cook for an additional ten minutes. 




























































3. Let the steam come out itself, and add to a serving dish. 


4. Garnish with some coriander and enjoy. 


Very spicy potatoes from me to you 


What you need: 


Six potatoes, peeled and cut into bite sized or even smaller pieces 
Two onions, sliced 
Half teaspoon of whole cumin/jeera
Half teaspoon of turmeric powder/haldi 
Half teaspoon of red chilli flakes/powder (Lal mirch powder) 
Salt to taste 
Half teaspoon garam masala powder 
One and a half teaspoon raw mango powder (amchoor powder) 
Oil to cook 
A bit of chopped coriander for garnish 


What to do: 


1. Add some oil to a wok, and once its hot, add the cumin, make sure it splutters. Once its done, add the onion, and let it brown. 































2. Now, add the turmeric, red chilli flakes, and salt. 































3. Keep cooking, till the potatoes are done, or not raw from anywhere. Once this happens, add the garam masala powder and the raw mango powder. 


4. Twist around, and serve garnished with chopped coriander. 


Lovely winter peas 


What you need: 


Two cups of shelled peas 







































Three onions chopped lengthwise 
Whole cumin, half teaspoon 
Salt to taste 

Half teaspoon of turmeric powder/haldi 
Half teaspoon of red chilli flakes/powder (Lal mirch powder) 
Half teaspoon garam masala powder 
Oil 



What to do: 


1. Add some oil to a wok, and add the cumin to it, once the oil is hot. 


2. Add the peas to this, then the onions. Add all the masalas, and let it cook for around fifteen minutes, till the peas are soft. This might take a long time so please be patient. 🙂































You can either make plain rice or rotis, and enjoy your meal. Also, dont forget to cut up some cucumber and carrots lengthwise, along with a generous squeeze of lemon juice for salad. This was a feast fit for veggie royalty. We ended the meal with some store bought shrikhand, it only made my day better. 

Some lovely salad to go with the meal!
