The most about toast which I can ever boast

Hello hello fellow marshmellows! (vegan mellows please). Ive got so many pending blog posts, but just havent gotten the time to write. Im currently in the middle of three internships, so im officially running around trying to reach them on time. That is a bad excuse. Blogging should be excuse free. Whatevs. So anyway, Ive been demanding that my mummy make me breakfast. She has these amazing vegan breakfast ideas (one stolen from a restaurant), and Im showing you two toast related ones. Oh, and I also have a vegan french toast recipe (sweet and salted). So four recipes in one post. Thats pretty impressive. I think so you also think. Please. Thanks.

NUMBER ONE: VEGAN TOAST WITH BOTTLE GOURD AND CARROTS (Lauki Gajar Toast) 

What you need:

Half a bottle gourd, cut into thin rounds

One carrot, cut into rounds

Half a tomato and half an onion, chopped finely

Salt and pepper to taste

Two toasts (whole wheat prefs)

What to do: Guess the recipe. Im lazy. Accha ok will give it to you. Just saute the onion and tomato (add some salt). Keep aside. In the same pan, (or a different one if you want more washing up), add the carrot and bottle gourd. Also add a dot of oil, and some salt and pepper. Cook until tender (no crunch, no mush) stage.

Then, add the onion tomato mix on top of the toast, then the carrots and bottle gourd. You are good to go. Enjoy your breakfast.

NUMBER TWO: VEGAN TOFU TOAST 

Half a tomato and half an onion, chopped finely

Salt and pepper to taste

Two toasts (whole wheat prefs)

Sliced tofu (First press between two plates, then slice sideways)

What to do:

Like above, saute the onion and tomato.

Then, pan fry the tofu. And observe the quinoa tikkis.

Prepare by adding the onion-tomato mix and then the tofu slices to the two toasts. Enjoy enjoy.

NUMBER THREE: VEGAN CINNAMON FRENCH TOAST

This gets slightly complex. Slightly. Not very.

What you need:

1/2 cup soy milk (any nut milk will do 🙂 )

1/2 tablespoon maple syrup (can sub with jaggery syrup, taste at your own risk)

1 tablespoon atta

1/2 tablespoon nutritional yeast (optional)

Cinnamon to taste

Three slices of bread

What to do:

Mix up all the batter ingredients. Dab the bread in it. Pan fry in a little bit of oil. Love yourself and give yourself a kissie. Enjoy your vegan toast 🙂

For a namkeen (salty) version, dont add the cinnamon and maple syrup, add some finely chopped onion, salt, pepper and green chillies. Everything else (atta, milk) remains the same.
