So basically, I had a ton of greens in my fridge, and I decided to use as many as possible up in this salad. It turned out to be absolutely delicious. Not being too modest here clearly, but thats how we rule in the Menon kitchen. We make (mostly) delicious food. So here goes.
LOADED WITH GREENS SALAD
What you need:
Two handfuls of chopped spinach (I cant find baby spinach here for whatever reason)
One cup of grated beetroot
Around 15-16 rocket lettuce leaves, broken up or chopped
A bunch of turnips. halfed
Two cucumbers, chopped into cubes (with the skin on prefs)
For the dressing
Juice of one kinnow/orange
A splash of balsamic vinegar
What to do:
Take out a huge salad bowl. Add the greens, beet, cucumber and turnips. Then prepare the dressing in another chhota bowl. Remember to soak the raisins for around 10-15 minutes in the dressing so that they are nice and softy. Add the dressing to the salad. Dance to some cheesy bollywood music, this might help.
