So I was in Pune for a week and my cousin bought an amazing, lush bag of greens. She also had a bunch of other stuff at home, which was completely salad friendly. I made two salads one evening, one with honey, one without. Hence one vegan, one non vegan. So here is the vegan one.
What you need:
For a moderate salad bowl. . .
A bunch of greens, the more the better, but approx 250 grams of greens (mixed)
Half a small cherry tomato box (around 15-20)
Some mixed nuts, as per taste
Olives (the more the better, YUM)
Chopped up herbed tofu (This was this amazing thing I found in Pune, tofu loaded with herbs. It was really flavorful and easy to chop up and let flow into the salad) – If you dont have herbed tofu, regular wont work, so omit it.
For the strawberry vinaigrette

10-15 strawberries, blitzed in the mixie (If the strawberries are not sweet enough, add some sugar)
Vinegar and olive oil to taste
What to do:
1. Add all the salad ingredients to a bowl.
2. Mix up the vinaigrette well, and add that in. Adjust for taste. Add more strawberries if you want, the more the better.
3. Eat up the salad. We had this barbeque happening on the side which came after the salad, which was great, and the salad was a perfect accompaniment. 🙂
