Dish 11 – puffed amaranth bhel puri

Bhel puri is a delicious vegan easy snack, which is great for 4 o clock hunger pangs, or even 6 o clock ones. Here, I have replaced puffed rice with amaranth, and removed the sauces part. It tastes good and all.

What you need :
One onion, finely chopped
One lemon
One and a half cups of puffed amaranth
Half a knob of ginger, thinly sliced
One green chilli (add at your own risk)
Rock salt to taste

What to do:

Mix the onion, puffed amaranth, ginger, green chilli and rock salt in a bowl. Squeeze one lemon onto the bowl. Mix well.

If the mixture gets too sour, add some more amaranth. Amaranth is good, good is amaranth.
