Six ingredient cashew cheese!

For my fifth vegan MoFo post, I made some cashew cheese. I’ve made some in the past, but this is an easier version. I am in love with easy blender recipes these days, hope you enjoy this one! xx

SIX INGREDIENT CASHEW CHEESE

What you need:
A cup of cashews soaked overnight
Three medium sized garlic cloves
One teaspoon of chopped ginger
1/2 to 1 teaspoon of red chilli powder
Salt to taste
Juice of one lemon

What to do:

1. Drain the cashews, throw out the soaking water basically.

2. Add the cashews and other stuff to a blender with a little bit of water.

3. Blend blend blend.

4. Eat!

I used this to salvage the muffins I made yesterday, but you can enjoy them on whole wheat toast or even apples!
