Vegan MoFo post 10 : marinated desi style veggies in cashew cream sauce

So for today, I had with me around a cup of leftover soaked cashews from my cashew bar (successful) experiment, and I decided to use it to marinate some vegetables in and roast.

This was inspired by my Facebook feed where I saw some luscious marinated gobi (cauliflower) and I obvs decided to veganize the recipe.

So here is what happened today:

MARINATED VEGETABLES IN A DESI CASHEW CREAM SAUCE

What you need:
for the sauce

A cup of cashews, soaked overnight
A teaspoon each of garam masala, turmeric, red chilli powder (less if the spice is too much, tbh I put in 1/2 a teaspoon as the red chilli powder I use
is very strong) , coriander powder and salt
A knob of ginger, chopped
Two cloves of garlic, halved

Two medium cauliflowers, cut into florets
Four small onions, quartered
5-7 whole mushrooms

What to do:

1. Blend all the sauce ingredients together with a little bit of water.

2. Take a huge bowl or pan, and put all the vegetables in it.

3. Lather the vegetables with the sauce.

4. Arrange on a pre-greased baking tray, and bake for 15-20 minutes till the no crunch, no munch phase.

5. Eat!
