So I was planning on using zucchini in a dip today, but went against it because I found some pumpkin in the fridge!
Also this was my mothers idea. And I just went along. Because mothers can be the best. Yes.
What you need:
Approx 100 grams of pumpkin, cut into small pieces and steamed
3/4th cup of chickpeas, soaked overnight and boiled, or just use a can.
Four cloves of garlic
5-6 basil leaves
Salt to taste
Juice of half a lemon, or add more if you want
A tablespoon of oil, (neutral, not mustard or sesame)
What to do:
1. Purée the pumpkin in the blender first. Blend blend blend.
2. Add the chickpeas and some water if you need to.
3. Also add everything else.
4. Blend! And really and seriously you’re done. Woop
As an update to this, I decided to make chapati wraps. Just roll out a big size chapati (even tortilla wraps will work perfectly). Add your favourite veggies (I used cucumber, tomatoes and onions sliced) and wrap and eat!
You can even roast the veggies first, that would be lovely!
