EASY VEGAN MAYO
What you need:
1/2 cup soy milk
1 cup oil
A teaspoon of lemon juice
A teaspoon of mustard
What to do:
1. Blend the soy milk and lemon juice together. Smell the loveliness.
2. Slowly add the oil, 1/4th cup at a time is my guesstimation and keep blending. I don’t have one of those blenders with a slot on top to put the oil in, so I kept stopping it and adding the oil.
3. Add the mustard towards the end.
4. Enjoy with burgers!
